Easy Chipotle Salmon Burger

Ingredients

1lb Ground Salmon Meat

2 tbsp chopped chipotle in adobo

½ cup breadcrumbs (can sub for gluten-free)

2 eggs
-
1 tbsp soy sauce
-
2 tsp honey
-
1 tsp garlic powder
-
1 tsp chili powder
-
salt & pepper
-
sliced pepper jack cheese
-
olive oil for cooking
-
brioche buns
-
baby gem lettuce
-
sliced red onion
-
sliced tomato
-
1-2 tbsp chipotle in adobo sauce

½ cup mayo
-
2 tsp honey
Chipotle Mayo:
Directions
To make the burgers, add the ground salmon meat, breadcrumbs, eggs, chopped chipotle in adobo, tamari, honey, garlic powder, chili powder, salt and pepper to a large bowl.
Once well mixed, form the mix into 4 - 6 burgers.
Heat oil in a large skillet over medium heat.
Cook the burgers for 3-5 minutes per side. Add cheese and cook until melted.
To make the mayo, combine the ingredients in a small bowl.
To assemble the burgers, layer toasted buns with chipotle mayo, burgers, lettuce, red onion, and tomato. Add the top bun.
