Product Information

Our seafood is always wild, never farmed. Each portion is flash frozen, vacuum-packed, and pre-portioned for convenience.

Yes! All of our seafood is wild and sustainably caught in Alaska and along the Washington and Oregon coast, except for our wild gulf shrimp which are sustainably caught along the coast of Louisiana. All of our seafood is 100% from US waters and processed here in the US, never sent overseas. We do not sell any farm raised seafood.

We flash freeze our seafood immediately after harvest to lock in freshness, flavor, and nutrients. This process preserves quality better than “fresh” fish that has been sitting on ice for days.

No. Our seafood is 100 percent natural, with no added chemicals, colorings, or preservatives—just pure, wild-caught fish and shellfish.

Store unopened portions in your freezer at or below 0°F. Once thawed, refrigerate immediately and consume within two days. Avoid refreezing seafood that has fully thawed.

For a comprehensive guide to thawing frozen seafood, click here.

The safest way to thaw your seafood is under refrigeration. We recommend removing the product from the original packaging, placing it in a plastic bag or on a plate, and allowing it to thaw in the refrigerator for 6-8 hours, or overnight.

To thaw more quickly, place the sealed package in a bowl of cold water for 30–45 minutes. Do not thaw at room temperature or in warm water, as this can affect texture and safety.

*Keep refrigerated until serving or preparing. We recommend consuming within 1-2 days of thawing.

Once thawed, seafood should be kept refrigerated and used within 1–2 days for best taste and safety. If not cooking right away, keep it frozen until ready to use.

All of our seafood is processed and vacuum-packed in the United States, primarily in Alaska and the Pacific Northwest, under strict quality and food safety standards. We never ship our seafood overseas for processing, we support our local USA fishing families and processors.

Our Wild Alaska Weathervane Scallops come in 1.25 lb blocks, a format that makes the most sense for preserving their incredible quality. That’s because our fishermen shuck, clean, pack, and freeze them right on the boat, locking in peak freshness. To offer smaller portions, we’d have to thaw and refreeze them on land, which could compromise their texture and taste. Instead, we simply vacuum-seal the blocks before shipping to maintain their freshness, flavor and texture.

We know that some of you prefer smaller portions, so here’s an easy method to partially thaw and separate your scallops while keeping the rest frozen for later.

To enjoy the perfect portion of scallops now and save the rest for later, follow these simple steps:

Begin Partial Thawing

Fill a large bowl with cold water (do not use warm water).

Submerge the package of scallops in the cold water for about 15–20 minutes. This will soften the outer edges slightly while keeping the interior frozen.

Separate the Desired Amount

Once the scallop block is slightly thawed and pliable, remove it from the bag and place it on the cutting board.

Use your hands or a knife to gently separate the portion you wish to prepare. Work carefully to avoid damaging the scallops.

Refreeze the Remaining Scallops

Immediately transfer the unused portion into a freezer-safe bag or container.

Label the package with the date and return it to the freezer promptly.

Cook and Enjoy

Allow the scallops you plan to cook to finish thawing and then rinse under cold water. Pat dry with a paper towel.

Your scallops are now ready to prepare!

Our crab products are fully cooked. You may simply thaw and enjoy!

We love crab served chilled or at room temperature, but if desired, you may warm the crab before serving. To warm your crab, we recommend you steam it for four minutes or bake in 400 degree oven for three or four minutes, however, be careful not to overheat it as the meat can become tough.

Our canned albacore tuna should be stored in a dry, cool place like a cupboard or pantry. The canned tuna is best consumed within 3 years.

As costs across wild fisheries and cold-chain shipping have increased, we have made small price adjustments to ensure we can continue supporting our fishermen and providing you with the highest quality wild seafood. Our priority is maintaining exceptional quality and sustainable sourcing.

We proudly source our seafood from the pristine waters of Alaska and the Pacific Northwest. Our team works directly with trusted fishing families and boats who share our commitment to sustainability and responsible harvest practices. Each catch is traceable back to its source so you know exactly where your seafood comes from.

These regions are home to some of the most sustainable fisheries in the world. Cold, clean waters and science-based management ensure that fish stocks remain healthy for generations to come. It’s where our own family fishing legacy began, and it’s why we continue to focus on the fisheries we know best.

We only partner with fisheries that meet or exceed U.S. sustainability standards. Alaska’s constitution requires all seafood to be sustainably managed, and every harvest follows strict quotas and monitoring systems. By sourcing exclusively from these fisheries, we help support healthy oceans and fishing communities.

Flash freezing is a rapid freezing process that locks in freshness at its absolute peak. As soon as the seafood is caught and cleaned, it’s frozen within hours—often right on the boat or at a nearby dockside facility—using ultra-cold air or liquid nitrogen systems that bring the temperature down to around -40°F.

This quick freeze forms tiny, uniform ice crystals inside the fish instead of the large crystals that develop during slower freezing. The smaller crystals protect the delicate texture of the seafood and prevent moisture loss, so your fish stays firm, flaky, and flavorful once thawed.

Flash freezing is different from typical “frozen” seafood, which may sit for days before being processed. By freezing immediately after harvest, we lock in the natural taste, nutrients, and freshness you’d expect from seafood caught that very day. When thawed properly, it tastes just like it came straight off the boat.

Yes, and in most cases, it’s even better. “Fresh” seafood at the grocery store can often be several days old by the time it reaches the display case. Once a fish is caught, it’s handled, shipped, stored on ice, and displayed before you ever take it home. During that time, the texture can soften and the natural oils begin to break down, especially in rich, fatty fish like salmon or sablefish.

Flash frozen seafood, on the other hand, is frozen within hours of harvest, often right on the boat or at a nearby dockside facility. This ultra-fast process locks in peak freshness, taste, and nutrients. Because freezing happens so quickly, it prevents the formation of large ice crystals that can damage the fish’s cellular structure. The result is seafood that retains its firm, flaky texture and clean ocean flavor when thawed.

At Premier Catch, our fish is caught in cold, pristine Alaskan and Pacific Northwest waters, immediately cleaned, vacuum sealed, and flash frozen at -40°F. That means when it arrives at your door, it’s every bit as fresh - often fresher— - than what you’d find in a seafood case labeled “fresh.” You get the best of both worlds: premium wild-caught seafood and guaranteed quality every time you order.

While the term “sushi-grade” isn’t officially regulated, all of our wild-caught seafood meets or exceeds the same standards used by top sushi chefs. Our fish is handled with exceptional care from the moment it’s caught, then flash frozen at -40°F to lock in freshness and eliminate parasites naturally.

This rapid freezing process is the same method used throughout the sushi industry to ensure safety and quality. Many of our products, like wild Alaskan king salmon, sockeye salmon, halibut, and sablefish, are frequently enjoyed raw in sushi, poke, and ceviche.

We recommend thawing your seafood slowly in the refrigerator before preparing any raw dishes to maintain texture and flavor. Always use your best judgment and consume raw seafood only when it’s been stored and handled properly.

Yes, many of our wild-caught products are perfect for homemade sushi, sashimi, and poke. Because our seafood is flash frozen at ultra-low temperatures shortly after harvest, it preserves the same freshness and texture that professional sushi chefs rely on.

For the best results, always thaw your seafood slowly in the refrigerator, never at room temperature or in warm water. Once thawed, pat it dry with a paper towel to remove excess moisture before slicing. Use a clean, sharp knife to cut the fish against the grain for the smoothest, most tender texture.

Our wild Alaskan king and sockeye salmon, halibut, sablefish, scallops and spot prawns are all popular choices for sushi and poke. If you’re new to preparing raw seafood at home, start simple with a salmon poke bowl or hand rolls - both showcase the clean, natural flavor of wild fish beautifully.

Because freshness and handling are so important, we recommend enjoying thawed seafood within 24 hours if you plan to serve it raw.
