This spot prawn ceviche recipe is a refreshing, citrusy dish featuring tender, succulent spot prawns marinated in lime juice, mixed with diced tomatoes, red onions, cilantro, and jalapeños for a touch of heat. Serve it chilled, with a side of tortilla chips, for a delicious appetizer or light meal.

Ingredients

¼ cup olive oil

juice of 1 orange

juice of 1 lime

juice of ½ a lemon

2 tsp dijon mustard
-
2 tsp honey
-
salt & pepper
-
6-8 Wild Alaska Spot Prawns, peeled
-
1 tsp finely diced cucumber
-
1 tsp finely diced celery
-
½ tsp finely diced tomato
-
cucumber moons to garnish
-
1 jalapeño to garnish
-
crackers or tortilla chips to serve

Directions
Thaw spot prawns. Peel and rinse as many as you would like to serve. (I recommend 3-4 per person)
In a small bowl, mix together the citrus dressing ingredients. Whisk until well combined.
Dice the cucumber, celery, and tomato.
Combine the vinaigrette and ceviche ingredients in a mixing bowl and allow to marinate (cure) for 3-5 minutes.
Assemble ingredients on a plate. Add the remaining dressing. Garnish with cucumber "moons” and jalapeño slices.
Serve immediately and enjoy!
