Ingredients
8oz Wild Snow Crab Meat
1 stalk celery, finely diced
2 tbsp red onion, finely chopped
1 ripe avocado, diced
1 tbsp fresh parsley, chopped (or dill)
1 tbsp lemon juice (plus more to taste)
1 tsp Dijon mustard
2 tbsp mayonnaise (or Greek yogurt for a lighter option)
Salt & pepper, to taste
Optional: a pinch of Old Bay seasoning or a dash of hot sauce for extra flavor
Directions
In a medium bowl, whisk together lemon juice, Dijon mustard, and mayonnaise until smooth.
Gently fold in celery, red onion, parsley, and avocado.
Add the snow crab meat and gently toss to combine, being careful not to break up the lumps too much.
Add salt, pepper, and optional seasonings to taste.
Enjoy immediately as a salad, on toast, in butter lettuce cups, or stuffed into an avocado half.
