Easy Cod Fritters with Sriracha Mayo

Ingredients

  • 1 lb Wild Alaska Cod fillets

  • 2 eggs

  • 1/4 cup regular flour

  • 2 garlic cloves, minced

  • 1/4 cup finely chopped green onions

  • Zest of 1 lemon

  • 2 tbsp parsley, finely chopped

  • 1 tsp Dijon mustard

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • Olive oil or avocado oil for pan-frying

  • 1/2 cup mayonnaise

  • 1–2 tbsp Sriracha (to taste)

  • 1 tsp lime juice

  • Pinch of salt

  • Lemon wedges, for serving (optional)

Directions

  1. Lightly poach or steam the cod until it’s just cooked through (about 5–7 minutes). Let it cool slightly, then flake with a fork and set aside.

  2. In a large bowl, whisk the eggs, then stir in the flour, garlic, green onions, lemon zest, parsley, mustard, paprika, salt, and pepper. Fold in the flaked cod until everything is well combined. The mixture should be moist but hold together—add a little more flour if it’s too wet.

  3. Heat a thin layer of oil in a skillet over medium heat. Scoop out 2-tablespoon portions of the cod mixture and flatten slightly into patties. Cook for 2–3 minutes per side until golden brown and crispy. Transfer to a paper towel–lined plate to drain.

  4. In a small bowl, mix the mayo, Sriracha, lime juice, and salt until smooth.

  5. Serve the cod fritters hot with a side of spicy Sriracha mayo for dipping. Garnish with extra parsley or lemon wedges if desired.
