These Stuffed Sweet Potatoes with Spot Prawns and Avocado are a fresh, nourishing twist on a classic baked potato. Roasted until perfectly tender, the sweet potatoes are loaded with creamy avocado mash and buttery wild spot prawns sautéed in garlic and spices. Finished with a splash of lime and fresh herbs, this vibrant dish hits the perfect balance of sweet, savory, and citrusy. It’s easy to make, packed with protein and healthy fats, and perfect for a light lunch, dinner, or even a weekend brunch.

Ingredients
8-12 Wild Alaska Spot Prawns
2 medium sweet potatoes
1 ripe avocado, mashed or sliced
1–2 tbsp olive oil or avocado oil
1 tsp garlic (minced)
Juice of 1 lime
1/4 tsp smoked paprika
1/4 tsp cumin
Chopped cilantro
pickled red onions
cotija cheese
salt + pepper to taste
sliced limes
Directions
Preheat oven to 400°F (200°C). Scrub and dry the sweet potatoes, then prick them a few times with a fork. Rub with a little olive oil and place on a baking sheet. Roast for 40–50 minutes, or until tender and caramelized.
While the sweet potatoes roast, heat 1 tbsp oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds.
Toss in the spot prawns, paprika, cumin, salt, and pepper. Sauté for 2–3 minutes until they’re pink and opaque. Remove from heat and set aside.
In a small bowl, gently mash avocado with lime juice, salt, and chopped cilantro, reserving a little cilantro for garnish. Keep it chunky or smooth, depending on your vibe.
Slice each roasted sweet potato down the center and fluff the inside with a fork. Spoon in the avocado mash, top with sautéed spot prawns, and garnish with cotija and pickled red onions.
Finish with a sprinkle of sea salt, cracked pepper, a fresh squeeze of lime, and extra cilantro.
