Pumpkin Cheese Ball with Dungeness Crab

Wild Dungeness crab meat folded into cream cheese beaten with ranch seasoning, green onions, diced bell pepper and cheddar. The mixture is molded into a ball, rolled in more cheddar and wrapped tight in plastic with rubber bands criss-crossed around it, then chilled two to eight hours so the ridges set. The bell pepper stem goes on last.

Wild Dungeness crab is folded into a ranch cream cheese and cheddar mixture, then chilled and shaped into a pumpkin for a festive, make-ahead crab dip.

Pumpkin Cheese Ball with Dungeness Crab

Ingredients

  • 1 cup Dungeness Crab Meat

  • 2 x 8oz block of cream cheese, softened to room temperature

  • 2 tbsp ranch seasoning

  • 4 stalks diced green onions, white and green parts

  • 1 bell pepper (save the stem!)

  • 2+ cups shredded cheddar cheese

  • 2 tsp garlic powder

  • crackers of choice

  • saran wrap and 5-6 thick rubber bands

Directions

  1. In a large bowl, mix cream cheese, ranch dressing, garlic powder, green onions, diced bell pepper, and one cup of cheddar cheese until well combined.

  2. Gently fold one cup of Dungeness crab meat in the cheese mixture.

  3. Lay two large pieces of Saran Wrap on a cutting board and sprinkle a layer of cheddar cheese on top.

  4. Add the crab mixture on the cheese and mold into a ball shape.

  5. Sprinkle the rest of the cheddar cheese to cover the top and sides of the crab ball.

  6. Use the Saran Wrap to wrap up the ball until completely covered.

  7. Wrap it up into a tight ball.

  8. Add four large rubber bands around the ball, criss-crossing to create the indents of a pumpkin.

  9. Place the crab ball in the fridge for 2-8 hours to solidify the shape.

  10. When ready, carefully cut the rubber bands and remove the Saran Wrap.

  11. Add the bell pepper stem to the top.

  12. Serve with crackers of your choice.

  13. Enjoy!
