Cooked sushi rice is molded around wild Alaska ground coho salmon, avocado and cucumber, then rolled in sesame seeds and furikake and topped with sriracha mayo.

Ingredients
½ cup Wild Alaska Coho Salmon Meat
2 cups cooked sushi rice, room temperature
½ avocado, diced
2 tbsp diced cucumber
black sesame seeds
furikake seasoning
sliced jalapeño to garnish
sriracha mayo and soy sauce
Saran Wrap
Directions
Start with a large piece of saran wrap.
Add a round layer of cooked sushi rice to the Saran Wrap.
In the center of the rice, add a spoonful of ground salmon, avocado, and diced cucumber.
Add more rice on top.
Wrap up the sides of the saran wrap to create a ball shape. Press tightly into a ball. (The smaller the ball, the easier it is to make and roll in sesame seeds)
Add sesame seeds and furikake seasoning to a small bowl or plate.
Roll the Onigiri ball in sesame seeds until well covered. Top with sriracha mayo and a slice of jalapeño.
Serve with soy sauce and enjoy!
