Mexican-Inspired Taco Salad with Spot Prawns

A pound and a half of wild Alaska spot prawns tossed with smoked paprika, cumin, chili powder and garlic, then seared two minutes a side over high heat. The salad underneath is mixed greens with cherry tomatoes, corn, black beans, red onion, jalapeño and radish, dressed with lime, cumin and chili powder and finished with crumbled tortilla chips.

Mexican-Inspired Taco Salad with Spot Prawns

Ingredients

    • 1.5 lbs Wild Alaska Spot Prawns (peeled)

    • 1 tbsp olive oil

    • 1 teaspoon smoked paprika

    • 1 teaspoon ground cumin

    • 1/2 teaspoon chili powder

    • 1/4 teaspoon onion powder

    • 1/4 teaspoon cayenne pepper (optional, for heat)

    • 2 cloves minced garlic

    • salt and pepper

    • 1 cup cherry tomatoes, halved

    • 1 cup corn kernels (fresh, canned, or grilled)

    • 1 cup black beans

    • 1/2 small red onion, thinly sliced

    • 1 jalapeño, finely chopped (optional, for heat)

    • 1/4 cup fresh cilantro, chopped

    • radish, thinly sliced

    • Avocado, diced

    • 4 cups mixed greens or shredded romaine lettuce

    • crumbled tortilla chips

    • juice of 2 limes

    • 2 tbsp olive oil

    • 1 garlic clove

    • ½ tsp cumin

    • ½ tsp chili powder

    • salt and pepper to taste

    Directions

    1. Thaw, rinse, and peel spot prawns.

    2. Toss prawns with olive oil, minced garlic, smoked paprika, cumin, chili powder, onion powder, cayenne pepper, salt, and pepper.

    3. Pan sear prawns in a skillet over high heat for two minutes per side.

    4. In a large mixing bowl or on a platter, add the mixed greens, cherry tomatoes, corn, black beans, red onion, radish, avocado, jalapeño, and cilantro.

    5. In a small bowl, whisk together lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper. Set aside.

    6. Drizzle the dressing over the salad and toss everything together until evenly coated. Taste and adjust seasoning as needed.

    7. Top with the seared prawns, crumble tortilla chips on top, and season with salt and pepper!
