Megan’s Halibut Olympia

Ingredients

  • 4x 8oz Wild Pacific Halibut

  • ¼ cup butter

  • 1 medium onion, chopped

  • ½ cup mushrooms, chopped

  • 2 cloves garlic, finely chopped

  • 1.5 cups sour cream

  • 1.5 cups mayonnaise

  • 1 tbsp dill

  • 1 tbsp Cajun seasoning

  • 1 cup crushed crackers (Ritz are recommended)

Directions

  1. Preheat oven to 375 degrees.

  2. Thaw halibut and pat dry. Line a 9”x13” inch pan with parchment paper.

  3. In a skillet over medium heat, sautée the butter, onion, garlic, and mushrooms until fragrant. Spread across the pan.

  4. Place halibut on top of the sautéed mixture.

  5. Mix sauce ingredients together in a bowl until well combined. Spread sauce on each halibut fillet.

  6. Add crumbled crackers on top of the halibut.

  7. Bake for 20 minutes or until the crackers have browned and the fish is cooked through.

  8. Serve and enjoy!
