Kale Pesto Stuffed Halibut
2 x 8oz Wild Pacific Halibut
salt & pepper
1 -2 cups chopped kale
3 scallions (white and green parts), chopped
1 stalk celery, chopped
¼ cup feta cheese
1-2 tbsp olive oil
optional: 1 tbsp hot honey
Preheat the oven to 450 degrees. Thaw halibut and pat dry.
In a food processor, combine the kale, scallions, celery, feta, salt, pepper, and 1 tbsp of olive oil. Pulse until you get a paste. Optional: add hot honey for a sweet kick!!
Place the halibut in a baking dish and lightly season with salt and pepper.
Slice halfway through the fillet to create space to fill with the pesto and stuff the halibut with pesto.
Bake for 15 minutes. Serve with salad and top with more pesto if desired!
