Halibut Schnitzel Bowls

Ingredients

2 x 8oz Wild Pacific Halibut

1 cup panko bread crumbs

⅓ cup all purpose flour (can sub gluten free)

1 tbsp smoked paprika
-
1 tsp garlic power
-
1 tsp onion powder
-
¼ tsp cayenne pepper
-
2 eggs beaten
-
salt & pepper
-
avocado oil, for frying
-
1 avocado
-
½ cup diced cucumber
-
2 tbsp diced peperoncini
-
¼ cup feta cheese
-
juice of ½ a lemon
-
salt & pepper
-
lettuce (we like a mix of kale + romaine)
-
tzatziki sauce
-
pita bread, cut into smaller triangles

Directions
Thaw halibut and pat dry. Chop each filet into 4 or 5 strips.
In one medium sized bowl, combine bread crumbs, flour, spices, salt, and pepper.
In another medium sized bowl, whisk two eggs.
Dip each piece of halibut in the egg mixture and then the bread crumb, flour mixture. Repeat until all pieces are covered.
Heat avocado oil in a skillet over medium-high heat and pan fry halibut for 8-10 minutes, flipping halfway through.
While the halibut cooks, prepare the cucumber avocado salad by tossing the ingredients together.
When the halibut is done, remove from heat and set aside for a few minutes to cool.
To assemble the bowls, start with chopped lettuce and add the cucumber, avocado salad, halibut schnitzel, pita slices, and top with tzatziki sauce.
