1 tsp celery, finely diced

1 tsp cucumber, finely diced

1 tsp tomato, diced

juice of 1 orange

juice of 1 lime

juice of 1 lemon

2 tsp dijon mustard

2 tsp honey
-
¼ cup olive oil
-
salt and pepper
-
habanero pepper, thinly sliced

Optional: chips or tostadas for serving
Directions
Thaw and peel the spot prawns, keeping them raw.
In a small bowl, whisk together the fruit juices, dijon, and honey in a large mixing bowl. Slowly whisk olive oil into mixture. Season with salt and store in the fridge.
Dice the cucumber, celery, and tomato. Add to a shallow bowl with the spot prawns.
Garnish with cucumber moons and sliced habanero peppers.
Pour marinade over the spot prawns and diced vegetables.
Let it marinate for 5-10 minutes to enhance the flavors.

Serve immediately, with chips or as is, and enjoy!
