Citrus Halibut with Cherry Tomatoes and Capers

Wild Pacific halibut is pan-seared until opaque, then topped with a warm pan sauce of garlic, cherry tomatoes, fresh orange juice and capers.
Ingredients
2 x 6oz Wild Pacific Halibut
1 tbsp olive oil, divided
3 cloves minced garlic
1 cup cherry tomatoes, halved
½ cup fresh orange juice
2 tbsp capers
salt & pepper, to taste
optional: chopped chives
Directions
Season the halibut fillets with salt and pepper and set aside.
In a skillet over medium heat, add half the olive oil and the garlic, and sauté (stirring often) for about 30 seconds or until fragrant.
Add cherry tomatoes, orange juice, capers, salt, and pepper and sauté for 4-5 minutes or until the cherry tomatoes become soft. Keep warm over low heat.
In another skillet, heat the remaining olive oil over medium-high heat.
Cook the halibut for 3-5 minutes per side or until opaque.
Pour the tomato, caper mixture over the halibut.
Garnish with chopped chives, if using, and serve. Enjoy!
