Citrus Halibut with Cherry Tomatoes and Capers

Ingredients

2 x 8oz Wild Alaskan Halibut

1 tbsp olive oil

3 cloves minced garlic
-
1 cup cherry tomatoes, halved

½ cup fresh orange juice

2 tbsp capers
-
salt & pepper
-
optional: chopped chives
Directions
In a skillet over medium, add garlic and sauté (stirring often) for about 30 seconds or until fragrant.
Add cherry tomatoes, orange juice, capers, salt, and pepper and sauté for 4-5 minutes or until the cherry tomatoes become soft.
In another skillet, heat some oil over medium-high heat.
Season the halibut filets with salt and pepper.
Cook the halibut for 3-5 minutes per side or until opaque.
Pour the tomato, caper mixture over the halibut.
Serve and enjoy!
