This Blackened Fish Sandwich features flaky, seasoned fish with a smoky kick, topped with creamy avocado slaw. The fish is pan-seared for a crisp exterior, while the tangy slaw adds a fresh contrast. Served on a toasted bun, it's a perfect balance of spice, texture, and flavor.

Ingredients

Wild Alaska Cod or Halibut (one filet/ person)

2+ tbsp olive oil, divided

1 tsp smoked paprika
-
½ tsp dried oregano
-
½ tsp garlic powder
-
salt and pepper
-
buns of choice
-
1 ripe avocado
-
2 cups slaw mix or chopped green cabbage
-
¼ cup pickles
-
2 tbsp sweet relish
-
juice of 1 lemon

salt and pepper

Avocado Slaw:
Directions
Thaw cod or halibut filets and pat dry.
In a small bowl, mix the paprika, oregano, garlic powder, salt and pepper.
Drizzle olive oil over the fish and pat the seasoning on both sides until evenly covered.
In a skillet over medium high heat, add olive oil and once hot, cook the fish until it is blackened and seared, about 4 minutes. Flip and cook on the other side, another 3-5 minutes.
While the fish cooks, toast the buns.
Add a scoop of avocado slaw to the bottom of each bun. Top with the cooked fish and any other toppings or sauces of your choice.
Avocado Slaw:
In a blender of food processor, add the mayo, avocado, pickles, relish, salt, and pepper. Blend until smooth.
Pour the mixture over shredded cabbage or slaw mix and toss to combine.
Store in the fridge until ready to serve and after if you have leftovers.
