Bay Shrimp Fried Rice

These recipes were created from our passion for seafood, using Premier Catch’s tasty, wild-caught Oregon Bay Shrimp. We love to share them with our friends and family. From our kitchen to yours, here’s one of our favorites!

Ingredients
1 cup Jasmine rice (cooked with 2 cups water)
2 tbsp vegetable oil, divided
1 tbsp peanut oil
1 small yellow onion
2 carrots, peeled and chopped
1/2 cup frozen green peas
1/2 cup sliced mushrooms (optional)
2 eggs
1 bunch green onions
1 tbsp soy sauce
optional: sriracha or soy sauce on top
Directions
Heat 1 tbsp vegetable oil + 1 tbsp peanut oil in large skillet over high heat.
Sauteé yellow onion, carrot, frozen peas, mushrooms, and the white part of the green onion until soft, about 2-3 minutes.
Move the vegetables to the sides of the pan and add more vegetable oil.
In the center of the pan, crack both eggs and gently scramble the eggs with the vegetables.
Add the rice to the pan and stir.
Add soy sauce and sliced green onions. Start with a little and you can always add more.
Stir bay shrimp in to warm them up before serving.
Serve and enjoy!
