Simple Pan-Seared Halibut with Zucchini Noodles

Ingredients

2 x 8oz Wild Pacific Halibut
-
8-12 ounces zucchini noodles
-
2 tbsp olive oil, divided
-
2 cloves minced garlic
-
¼ cup cherry tomatoes
-
salt & pepper
-
red pepper flakes
-
lemon slices
Directions
Thaw halibut portions and pat dry. Season with salt and pepper.
Heat olive oil in a skillet, over medium-high heat. Add the halibut and cook for 3-4 minutes per side or until the fish flakes easily with a fork. Once cooked, remove the halibut from the pan and set aside.
In the same skillet or a new one, heat olive oil and sauté minced garlic for 2 minutes or until fragrant.
Add the zucchini noodles and cherry tomatoes and cook for 3-4 minutes or until al dente.
Top zoodles the pan-seared halibut. Add some fresh lemon jucie and red pepper flakes for a kick.
Serve and enjoy!
