Old Bay Shrimp Burritos

Ingredients

1 tray Wild Alaska Spot Prawns

1-2 tbsp olive oil
-
½ cup yellow onion, diced
-
½ cup green bell pepper, diced

2 cloves garlic, diced
-
¼ tsp ground cumin
-
½ tsp paprika
-
salt & pepper
-
4 large flour tortillas, lightly toasted
-
1 cup cooked white rice
-
1 cup black beans, rinsed
-
¼ cup diced green onions
-
1 cup shredded Mexican cheese
-
⅓ cup mayonnaise
-
2 tsp sriracha
-
1 tsp lemon juice
-
½ tsp Old Bay seasoning

salt and pepper
Assembling the Burrito:

Directions
Thaw spot prawns, peel, and pat dry.
In a skillet over medium-high heat, sauté the diced white onion, green pepper, and garlic until fragrant, for about 2 minutes.
Stir in spot prawns, cumin, and paprika. Season with salt and pepper. Cook until shrimp are opaque, stirring occasionally, about 4 minutes.
While the prawns cook, prepare the Old Bay sauce by whisking together mayo, sriracha, lime juice, and Old Bay seasoning. If you want the sauce thinner, add about a teaspoon of water.
Assemble the burritos by laying a tortilla on plate or cutting board. Add ¼ cup white rice, ¼ cup beans, and ¼ of the shrimp filling. Top with shredded Mexican cheese and diced green onions. Roll burritos tightly, slice in half, and drizzle with Old Bay sauce and more green onions. Repeat with the remaining tortillas and ingredients.
