Watermelon Salad with Arugula and Feta
1 small watermelon (about 6 cups), cubed
1/2 cup feta cheese
3 cups arugula
more if you want a salad and less if you are using it as a garnish
Optional: mint, basil, or thinly sliced red onion
1/4 cup olive oil
2 tbsp lemon juice
2 tsp honey (more to taste)
Salt & pepper
Optional: chopped shallot
In a small bowl or cup, mix ingredients for the dressing and whisk until smooth.
In a large bowl, toss the cubed watermelon in the dressing.
Add arugula, feta, and mint, basil or red onion to the tossed watermelon. Gently toss.
Top with salt and pepper if needed!
