Island Style Grilled Scallops with Mango Salsa and Coconut Rice

Ingredients

1 package Wild Alaska Weathervane Scallops
-
Olive oil
-
Salt & pepper
-
1 mango, diced
-
½ cup red onion, diced
-
1 jalapeño, diced
-
juice of 1 lime
-
salt & pepper
-
fresh cilantro
-
4 cups cooked white rice
-
½ cup coconut cream
-
2 tbsp sugar or sweetener
Grilled scallops:
Mango salsa:
Coconut rice:
Directions
Thaw scallops and pat dry. Season with salt & pepper.
Prepare the mango salsa by adding the ingredients to a medium bowl and tossing with lime juice, salt, and pepper.
Cook the white rice according to package and stir in coconut cream and sugar.
Preheat grill to high heat and lightly spray with olive oil.
Sear scallops for 3 minutes per side.
Serve scallops over coconut rice and mango salsa.
