Chipotle Spot Prawn Taco Bowl

Ingredients

    • 1 Tray Wild Alaska Spot Prawns

    • Olive oil

    • Spice mix: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp salt and ground pepper

    • 3 cups chopped romaine lettuce

    • 2-4 cups brown rice

    • 1 can black beans

    • 1 cup cherry tomatoes, halved

    • 2 cups shredded cabbage

    • 1 cup Mexican shredded cheese

    • Avocado, sliced

    • ⅓ cup diced green onions

    • Dressing of choice

    Directions

    1. Thaw spot prawns, rinse, and peel.

    2. Lightly toss spot prawns in olive oil and toss in the spice mix.

    3. Preheat grill or the stovetop to medium high heat and cook the prawns for 2 minutes per side.

    4. To assemble the bowls, start with a base of rice and greens and top with shredded cabbage, black beans, tomatoes, avocado, Mexican cheese, green onions, and a dressing of your choice.

    5. Serve and enjoy!
