    blank

    • 1 peach, pitted and diced

    • 1 nectarine, pitted and diced

    • 1/2 tomatoes, diced

    • 1 jalapeno, sliced with seeds removed and diced into small pieces

    • 1/4 cup red onion, diced

    • 2-3 tsp lime juice

    • salt and pepper to taste

    Directions

    1. Pre-heat grill on med-high heat, approx 500 degrees.

    2. Mix ingredients for the salmon rub in a small bowl.

    3. Place salmon on foil and lightly rub with olive oil. Brush the rub on. Top with a squeeze of lemon juice.

    4. Place salmon on the grill with skin side up and turn the heat down to medium low. Close lid and grill for 3- 4 minutes.

    5. Gently flip the fish so the skin side is down and grill another 4-5 min.

    6. While the salmon is cooking, chop up the fruit and mix in the other salsa ingredients.

    7. Remove salmon from grill, serve with fresh fruit salsa, and enjoy!
