Lohikeitto, Traditional Finnish Salmon Soup

Creamy Finnish salmon soup (Lohikeitto) made with wild king salmon, potatoes, carrots, garlic, and dill. An easy one-pot fall dinner thatβs cozy, hearty, and packed with flavor.

Ingredients
2 x 6oz portions Wild Alaskan King Salmon, skinned and cubed
4 tbsp butter
1 onion, chopped
4-6 cloves minced garlic
5 cups chicken broth
2 carrots, sliced into rounds
4-6 yellow potatoes, cubed
1 cup heavy cream
2-3 tbsp dill (fresh if you have it)
salt & black pepper to taste
Directions
Melt butter in a dutch over. Add onion, cook until translucent and slightly golden. Add garlic and cool.
Add broth, potatoes, carrots, and salt / pepper to taste. Bring to a boil and cook until potatoes and carrots are fork tender.
Reduce heat down to simmer. Add salmon, cream, and dill. Cook gently, stirring occasionally until salmon is just cooked through.
Serve with good bread like sourdough and enjoy!
