Premier Catch Salmon Burgers

Ingredients

1 pound (2 x 8oz portions) of Wild Alaskan King Salmon (makes 4 patties)

2 green onions, sliced

2 eggs
-
2/3 cup breadcrumbs

2 tbsp horseradish

1 tbsp mayonnaise
-
juice from 1/2 lemon
-
2 tbsp fresh parsley
-
1 1/2 tsp salt

1/2 tsp pepper
Directions
In a food processor, pulse the salmon, green onions, eggs, bread crumbs, horseradish, mayo, lemon juice, parsley, salt & pepper until coarsely chopped.
Form into four patties.
Heat 2 tbsp olive oil in large skillet over med-high heat.
Cook salmon patties until opaque throughout, approx 4-5 min per side.
Serve plain, in lettuce or in a bun.
Top with your favorite sauce or more fresh lemon juice.
Our favorite sauce is a spicy mayo, mixing mayonnaise and sriracha to taste.
To add some greens, mix baby arugula with lemon juice, olive oil and sea salt.
