Wild Alaska true cod is battered in an Old Bay batter, fried until crisp, and stacked with bacon, lettuce, tomato and a lemon-garlic mayo on a toasted potato roll.
Ingredients

3 x 6oz Wild Alaska Cod Filets
1 cup all-purpose flour
½ cup water
½ cup milk
¼ cup baking powder
2 tbsp Old Bay Seasoning
1 tsp cayenne powder
1 tsp salt
vegetable oil or canola oil for frying

6 potato roll buns
6 slices of bacon
1 large tomato, sliced
pickles
butterhead or iceberg lettuce

½ cup light mayo
½ lemon, juiced
1 garlic clove, minced or grated
Directions

Combine the flour, milk, water, baking powder, and salt in a large bowl and whisk until smooth. Stir in the Old Bay seasoning and cayenne. If the batter bubbles, just continue to stir until smooth.

Heat 1.5 inches of oil in a small cast iron skillet or sauté pan on medium-high heat.
Slice cod fillets into thin strips and pat dry.
Coat each piece of cod in the batter and gently drop in the oil.
Cook each side for about 3 minutes or until golden brown.
Place on a wire rack or paper towels to cool and collect excess oil.
Fry the bacon in a skillet until crisp; drain on paper towels.

In a small bowl, combine mayo, lemon juice, and garlic to make the spread.
Toast the buns and add spread, crispy cod, pickles, tomatoes, bacon, and lettuce. Serve immediately.
