Premier Catch Crispy Cod BLT

Ingredients

2 x 8oz Wild Alaskan True Cod Filets

1 cup all-purpose flour
-
½ cup (heavy) of water
-
½ cup milk
-
¼ cup baking powder
-
2 tbsp Old Bay Seasoning
-
1 tsp cayenne powder
-
1 tsp salt
-
vegetable oil or canola oil for frying

6 potato roll buns
-
6 slices of bacon
-
1 large tomato, sliced
-
pickles
-
butter or iceberg lettuce
-
½ cup light mayo
-
½ lemon, juiced
-
1 garlic clove, minced or grated

Directions
Batter:
Combine the flour, milk, water, baking powder, and salt in a large bowl and whisk until smooth. Stir spices in. If the batter bubbles, just continue to stir until smooth.
Frying:
Heat 1.5 inches of oil in a small cast iron skillet or sauté pan on medium-high heat.
Slice cod filets into thin strips and pat try.
Coat each piece of cod in the batter and gently drop in the oil.
Cook each side for about 3 minutes or until golden brown.
Place on a wire rack or paper towels to cool and collect excess oil.
Assembling Sandwiches:
In a small bowl, combine mayo, lemon juice, and garlic to make the spread.
Toast the buns and add spread, crispy cod, pickles, tomatoes, bacon, and lettuce. Serve immediately.
