Premier Catch Crispy Cod BLT

Wild Alaska true cod sliced into thin strips, dipped in a seasoned Old Bay and cayenne batter and fried about three minutes a side until golden. The sandwich comes together on toasted potato rolls with a lemon garlic mayo, pickles, tomato, bacon and lettuce. Serve it right away while the cod is still crisp.

Wild Alaska true cod is battered in an Old Bay batter, fried until crisp, and stacked with bacon, lettuce, tomato and a lemon-garlic mayo on a toasted potato roll.

Premier Catch Crispy Cod BLT

Ingredients

    • 3 x 6oz Wild Alaska Cod Filets

    • 1 cup all-purpose flour

    • ½ cup water

    • ½ cup milk

    • ¼ cup baking powder

    • 2 tbsp Old Bay Seasoning

    • 1 tsp cayenne powder

    • 1 tsp salt

    • vegetable oil or canola oil for frying

    • 6 potato roll buns

    • 6 slices of bacon

    • 1 large tomato, sliced

    • pickles

    • butterhead or iceberg lettuce

    • ½ cup light mayo

    • ½ lemon, juiced

    • 1 garlic clove, minced or grated

    Directions

      1. Combine the flour, milk, water, baking powder, and salt in a large bowl and whisk until smooth. Stir in the Old Bay seasoning and cayenne. If the batter bubbles, just continue to stir until smooth.

      1. Heat 1.5 inches of oil in a small cast iron skillet or sauté pan on medium-high heat.

      2. Slice cod fillets into thin strips and pat dry.

      3. Coat each piece of cod in the batter and gently drop in the oil.

      4. Cook each side for about 3 minutes or until golden brown.

      5. Place on a wire rack or paper towels to cool and collect excess oil.

      6. Fry the bacon in a skillet until crisp; drain on paper towels.

      1. In a small bowl, combine mayo, lemon juice, and garlic to make the spread.

      2. Toast the buns and add spread, crispy cod, pickles, tomatoes, bacon, and lettuce. Serve immediately.
