Cod Taco Bowl
3 x 8oz Wild Alaskan True Cod
3 bell peppers (red, orange, and yellow)
1 sweet onion
white or brown rice
pico do gallo
Defrost cod and marinate in taco seasoning for 30 minutes or up to four hours.
Chop the bell peppers and onion and sauté in olive oil on medium-low high heat for 20 minutes.
Preheat grill to medium-high heat and grill cod for 8-12 minutes.
While the cod cooks, chop the lettuce and slice the avocados.
Assemble bowls with lettuce, rice, sautéed vegetables, cod, ranch dressing, avocado, and tortilla chips.
