Zucchini is halved lengthwise, scooped out and baked at 350°F for twelve to fifteen minutes. While it bakes, canned albacore is combined with celery, red onion, green onion, jalapeño, mayonnaise and dijon. The boats are stuffed, topped with sharp cheddar and returned to the oven for eight to ten minutes.

Zucchini Boats with Canned Albacore Tuna

Ingredients
1 can Premier Catch Canned Albacore Tuna
1 zucchini, halved lengthwise
1 celery stalk, diced
1/4 red onion, diced
1/4 cup green onions, chopped
2 tablespoons mayonnaise
1 tablespoon dijon mustard
1 Jalapeno, seeds removed and diced
1/4 cup shredded sharp cheddar or cheese of choice
salt and pepper to taste
Sriracha, optional
Directions
Preheat oven to 350°F and line a tray with parchment paper.
Cut the zucchini in half, lengthwise, and scoop out the middle.
Place the zucchini on the tray and bake for 12-15 minutes.
While the zucchini is cooking, combine the tuna, celery, red onion, green onion, jalapeño, mayonnaise, mustard, salt, and pepper. Stir until well mixed.
Stuff the zucchini with the tuna mixture and top with cheese.
Return zucchini boats to the oven for 8 to 10 more minutes. Enjoy!
Optional: drizzle sriracha over or top with more jalapeños.
