Wild Pacific halibut is brushed with olive oil and rubbed with a blend of kosher salt, onion powder, chili powder and black pepper, then baked at 425°F for twelve to fifteen minutes. While it bakes, cherry tomatoes, Kalamata olives, red onion and avocado are tossed with lime juice and spooned over the fish.

1 lb Wild Pacific Halibut (2 x 8oz portions)
Olive oil
1 tsp kosher salt
1 tsp onion powder
1 tsp chili powder
1/2 tsp black pepper

10 cherry or grape tomatoes, halved or cut in 1/4s
5 Kalamata Olives, halved
1-2 tablespoons red onion, diced
1/2 or whole avocado, diced
juice from 1 lime
pinch of salt

Preheat oven to 425°F and line a baking sheet with parchment paper.
In a small bowl, mix kosher salt, onion powder, chili powder, and black pepper.
Brush or drizzle halibut fillets with olive oil first and then the spice mix.
Place halibut on the lined baking sheet and bake for 12-15 minutes.

While the halibut is in the oven, chop and combine the tomatoes, olives, red onion, and avocado. Toss in lime juice and a pinch of salt.
Refrigerate until the halibut is ready.
When the halibut is done, pour the topping over and serve. Enjoy!
