Spot Prawn Tacos with Pineapple, Jalapeno, and Avocado

Wild Alaska spot prawns tossed in chipotle chili powder, ground ginger, dried thyme and cayenne, roasted at 450°F for six to eight minutes and broiled the last minute for a light char. They go into warm tortillas over smashed avocado, topped with a fresh salsa of pineapple, tomato, white onion, cilantro, jalapeño and lime, with cabbage over the top.

Wild Alaska spot prawns are rubbed with chipotle and spices, roasted until pink, and tucked into tortillas with smashed avocado and a fresh pineapple-jalapeno salsa.
Spot Prawn Tacos with Pineapple, Jalapeno, and Avocado

Ingredients

    • 1.5 lb Wild Alaska Spot Prawns, thawed and peeled

    • Olive oil

    • 3 cloves garlic, minced

    • 2 tsp chipotle chili powder

    • 1/2 tsp ground ginger

    • 1/2 tsp dried thyme 

    • 1/4 tsp cayenne pepper

    • salt & pepper

    • 1 cup pineapple, diced

    • 1/2 cup tomatoes, chopped

    • 1/2 cup white onion, diced

    • 1/3 cup cilantro, chopped

    • 1 jalapeno, seeded and diced (or roasted alongside the prawns, if preferred)

    • 2 tbsp fresh lime juice

    • Corn or flour tortillas

    • Avocado, smashed

    • Cabbage

    Directions

      1. Preheat oven or air fryer to 450°F. 

      2. Toss the prawns with olive oil, minced garlic, and the spice mixture.

      3. Arrange prawns on a baking sheet and roast for 6 to 8 minutes, until pink and opaque throughout. Broil for the last minute for a light char. Optional, roast the jalapeno at the same time to use for the salsa.

      1. Chop pineapple, tomatoes, onion, cilantro, and jalapeno and add to a bowl. 

      2. Mix in lime juice, salt, and pepper.

      1. Warm the tortillas and add smashed avocado, prawns, and the pineapple salsa. 

      2. Optional: top with cabbage and cilantro.
