Spot Prawn Tacos with Pineapple, Jalapeno, and Cilantro Lime Sauce

1.5 lb Wild Alaska Spot Prawns, thawed and peeled
- Olive oil
- 3 cloves garlic

2 tsp chipotle chili powder

1/2 tsp ground ginger

1/2 tsp dried thyme

1/4 tsp cayenne pepper
-
salt & pepper
-
1 cup pineapple, diced
-
1/2 cup tomatoes, chopped

1/2 cup white onion, diced
-
1/3 cup cilantro, chopped

1 jalapeno
-
2 tbsp fresh lime juice
-
Corn or flour tortillas
-
Avocado, smashed
-

Directions
Prawns:
Preheat oven or air fryer to 450 degrees.
Toss prawns in spices.
Arrange prawns on a baking sheet and roast for 6 to 8 minutes. Broil for the last minute for a light char. Optional, roast the jalapeno at the same time to use for the salsa.
Salsa:
Chop pineapple, tomatoes, onion, cilantro, and jalapeno and add to a bowl.
Mix in lime juice, salt, and pepper.
Tacos:
Warm the tortillas and add smashed avocado, prawns, and the pineapple salsa.
Optional: top with cabbage and cilantro.
