Ingredients

Wild Alaska Smoked King Salmon

Spring mix lettuce
-
1 cucumber, sliced

½ cup cherry tomatoes, halved

½ cup pomegranate seeds
-
½ cup feta cheese, crumbled

1 avocado, sliced
-
fresh dill to garnish

¼ cup olive oil
-
2 tbsp fresh lemon juice
-
1 tbsp dijon mustard
-
1 tsp honey
-
salt and pepper
Lemon Dijon Dressing:
Directions
Thaw the smoked salmon.
Add the spring mix to a large salad bowl and add cucumbers, tomatoes, feta, pomegranate seeds, avocado, and flaked smoked salmon. Garnish with fresh dill.
In a small bowl, whisk together the dressing ingredients. Toss in salad before serving.
Serve and enjoy!
