Salmon Poke Bowls

Ingredients

2 x 6oz portions Wild Alaskan Sockeye Salmon (also works well with King Salmon)

1/4 cup soy sauce

1/4 cup Ponzu sauce

1 tbsp sriracha sauce

2 tbsp sesame oil
-
1/4 sweet onion, chopped

1 tbsp sesame seeds
-
1 jalapeño, seeds removed, chopped
Directions
Salmon:
Thaw salmon, remove skin and cut into 1/2" pieces.
Mix other ingredients in bowl, then add salmon.
Let marinate in fridge for up to 4 hours.
While marinating, prepare the following:
1 1/2 cups cooked white or brown rice
1/2 large cucumber, chopped
1/2 avocado, chopped
4 green onions, chopped
1 small head crisp lettuce, chopped
To assemble bowls:
Place 3/4 cup rice in center of each bowl.
Place 1/2 lettuce around rice.
Layer around: cucumber, avocado, green onions, pickled ginger and sprinkle more sesame seeds on top.
Add wasabi or spicy mayo as desired.
