Surf and Turf Tostadas with Prawns & Carne Asada
Spot Prawn Tray (1.5lb)
1lb carne asada meat
12 tostada shells
1 can refried beans
crumbled coijta cheese
2 limes (one for guacamole and one to garnish)
¼ cup diced red onion
salt and pepper
Grilled Prawns & Carne Asada:
Thaw and peel spot prawns. Toss in your favorite taco seasoning or with olive oil, salt, and pepper for a simple version.
Preheat grill to 400 and once heated, cook seasoned carne asada steak for 6 minutes per side.
Add prawns to a grill pan and grill for 3 minutes per side.
In a medium bowl, add avocados, diced red onion, lime juice, salt, and pepper. Mash until well combined and set aside.
While the prawns and meat cook, heat refried beans in a pan. Add 2 tbsps of water if they seem dry.
Spread refried beans on the tostada shell as a base.
Add guacamole, prawns or steak, crumbled coijta cheese, chopped cilantro, and a slice of lime.
Serve and enjoy!
