Bay Shrimp Omelette with Vietnamese Rice Paper

Ingredients

⅓ cup Wild Oregon Bay Shrimp
-
spring roll wrappers (1 per omelette)
-
1 egg
-
1-2 tbsp diced green onion
-
1-2 tbsp chopped cilantro
-
Kewpie mayo
-
sriracha
-
salt & pepper
Directions
Thaw shrimp and prepare other ingredients.
Heat a skillet over medium heat. Add one spring roll wrapper and top it with chopped green onions.
Quickly crack an egg over the wrapper and whisk until it is evenly spread out and the wrapper is covered.
Add cilantro, shrimp, salt, pepper, and a drizzle of both kewpie Mayo and sriracha. Let sit until cooked through, about 4 minutes, and then fold in half.
Remove from heat and enjoy!
