Ingredients

2 Cans Premier Catch Albacore Tuna

4-6 cups mixed greens

1 cup green beans

4 large hard boiled eggs

2 cups roasted baby potatoes

½ cup olives
-
1 cup cherry tomatoes, halved

1 cup cucumber, sliced

Salt and pepper

½ cup olive oil
-
Juice of 1 lemon
-
2 tsp+ Dijon mustard (to taste)

1 tsp honey
-

Salad:
Dressing:
Directions
Start by hard boiling eggs and roasting baby potatoes. Chop the other vegetables.
In a small bowl, whisk the dressing ingredients and chill in the fridge.
Assemble the salad, starting with the greens, topped with strained and flaked tuna, and vegetables.
Serve and dress each portion.
