Teriyaki Salmon Lettuce Cups

Wild Alaska ground coho salmon is cooked in teriyaki sauce with garlic, then spooned into butter lettuce cups with sushi rice, avocado and sriracha mayo.
Ingredients

Wild Alaska ground coho salmon meat
1 tbsp olive oil
2 cloves minced garlic
½ cup teriyaki sauce

1 head butter lettuce
2 cups cooked sushi rice
Diced avocado, for topping
Sriracha mayo, for topping
Diced green onions, for topping
Jalapeño, sliced, to garnish
Soy sauce, for serving
Directions
Sauté minced garlic in olive oil over medium heat for 1-2 minutes.
Add ground coho salmon meat and pour ½ cup teriyaki sauce over the top. Cook for 5 minutes, or until opaque throughout and cooked through.
To assemble the lettuce cups, add sushi rice, ground salmon, diced avocado, and green onions to each piece of butter lettuce.
Garnish with sriracha mayo and jalapeño.
Serve with soy sauce.
