Ingredients
8oz portion of Wild Alaskan Sockeye Salmon
olive oil
1 zucchini
1 yellow squash
1/2 cup yellow onion
1 cup corn
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 jalapeno, sliced
1/2 cup cherry tomatoes
blue and yellow tortilla chips
salt and pepper
Directions
Grill or pan-fry the salmon with olive oil, salt, and pepper. Once cooked, set aside.
Slice the zucchini and squash in small half moon pieces and thinly slice the onion.
In a large skillet over medium-high heat, sauté the zucchini, squash, onion, salt and pepper in olive oil for about five minutes or until soft.
Place blue and yellow tortilla chips on a baking sheet.
Next, top with veggies, corn, tomatoes, jalapenos, salmon, and cheese.
Place under a broiler for about 5 minutes until the cheese has melted.
