Simple Salmon Chowder

Ingredients

8oz cooked Wild Alaskan Sockeye or King Salmon

2 tbsp butter
-
¾ cup chopped yellow onion

½ cup chopped celery
-
1 russet potato, chopped
-
1 large carrot, diced
-
½ cup frozen, thawed corn
-
2 tsp minced garlic
-
2 cups chicken broth
-
1 (12 fluid ounce) can evaporated milk or ½ cup whole milk

optional: chopped parsley, dill, or green onions as a garnish
Directions
Heat a large pot over medium heat and melt butter. Add diced onion, celery, and garlic and sauté until tender.
Add chicken broth and stir in potatoes and carrots and season with salt and pepper.
Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
Stir in salmon, corn, and milk. Cook until heated through.
Optional: Garnish with parsley, chopped green onions, and/or dill.
Serve hot and enjoy!
