Ingredients

Wild Oregon Bay Shrimp

2 eggs
-
1 cup panko bread crumbs

¼ cup flour (optional, can sub for more bread crumbs)

3 tbsp chives, plus more for garnish

1 tbsp chopped cilantro
-
2 cloves minced garlic
-
1 tsp smoked paprika
-
1 tsp lemon juice
-
salt & pepper

olive oil for pan-frying
Directions
In a large bowl, whisk two eggs. Add bread crumbs, minced garlic, diced chives, cilantro, salt, pepper, paprika, and lemon juice. Mix until well combined.
Gently fold Oregon Bay Shrimp in.
Form mixture into burger-sized patties or smaller balls for a bite-sized version.
Heat olive oil in a skillet over medium-high heat. Pan-fry cakes for 2 minutes per side or until golden and crispy.
Top with green onions and enjoy with a sauce of your choice.
Serve and enjoy!
