Seared Scallops with Crispy Bacon and Lemon

Ingredients

  • Wild Alaska Weathervane Scallops

  • 1 tsp butter

  • 1 tsp avocado oil

  • 4 strips bacon, cooked and crumbled

  • ¼ cup parsley

  • 1 lemon, zest and wedges

Directions

  1. Thaw scallops, rinse, and pat dry.

  2. Add the butter and oil and once sizzling, add scallops. Make sure to not overcrowd the scallops! You may need to work in batches.

  3. Cook the scallops for two minutes per side.

  4. Once cooked, plate the scallops with crumbled bacon, chopped parsley, and lemon zest.

  5. Serve with lemon wedges!
