Seared Scallops with Crispy Bacon and Lemon

Wild Alaska Weathervane scallops are seared to a golden crust in butter, then plated with crisp bacon, fresh parsley and bright lemon zest for a quick, elegant appetizer.

Ingredients
Wild Alaska Weathervane Scallops
1 tsp butter
1 tsp avocado oil
4 strips bacon, cooked and crumbled
¼ cup parsley, chopped
1 lemon, zest and wedges
Directions
Thaw scallops, rinse, and pat dry.
Cook the bacon in a skillet until crisp, then crumble; this can be done ahead of time.
Heat a heavy skillet over medium-high heat. Add the butter and oil and once sizzling, add scallops. Make sure to not overcrowd the scallops! You may need to work in batches.
Cook the scallops for two minutes per side, until a golden crust forms and the centers are just opaque.
Once cooked, plate the scallops with crumbled bacon, chopped parsley, and lemon zest.
Serve with lemon wedges!
