Salmon, Egg, and Avocado Breakfast Tacos
Start by scrambling your eggs. The key to light and fluffy eggs is cooking them low and slow and stirring as infrequently as possible. While they cook, you can chop the other ingredients.
Next, lightly fry three corn tortillas in a skillet over low heat.
Add the scrambled eggs and cooked salmon to each tortilla.
Top the tacos with avocado, cherry tomatoes, green onion, cilantro, salt & pepper.
Serve with hot sauce or sour cream or both!
