Premier Catch Spot Prawn Scampi
1.5lbs of Wild Alaska Spot Prawns, thawed & peeled
1 box linguine pasta
3 tbsp butter
3 cloves fresh garlic, minced
2 tbsp fresh parsley, chopped
juice from 1 lemon
1/4 cup white wine (we love to use - and sip - Ross Andrew Pinot Gris)
1/3 cup fresh grated Parmesan cheese
salt & pepper to taste
optional: red pepper flakes
Cook pasta in boiling water, drain and set aside.
Melt butter in large skillet over medium high heat.
Add garlic and then prawns.
Cook 2-4 minutes, flipping halfway through, until pink and opaque in center.
Stir in white wine, lemon juice, parsley, salt and pepper.
Remove from heat and add pasta to skillet and combine with prawns.
Top with parsley and parmesan cheese.
