Hot Honey Scallop Bowl

Ingredients

    • 1 package Alaska Weathervane Scallops

    • olive oil

    • 1 tsp brown sugar or coconut sugar

    • ½ tsp paprika

    • ½ tsp garlic powder

    • salt & pepper

    • Mike’s Hot Honey

    • 4 cups cooked sushi rice

    • diced green onions

    • sliced jalapeno

    Directions

    1. Thaw scallops and pat dry.

    2. In a small bowl, combine the brown sugar, paprika, garlic powder, salt, and pepper.

    3. Rub the spice mix onto the scallops.

    4. Heat olive oil in a cast iron skillet over medium heat and once heated, cook the scallops for 2 minutes per side.

    5. Cook rice according to package and add rice wine vinegar and white sugar to create “sushi rice.”

    1. Add rice to bowls and top with scallops, diced green onion, and jalapeño slices.

    2. Drizzle Mike’s Hot Honey over the bowl.

    3. Serve and enjoy!
