Grilled Sockeye with Watermelon Feta Salad

Ingredients

8oz Wild Alaskan Sockeye Salmon

Olive oil

Salt & pepper
-
Fresh lemon
-
2 cups chopped watermelon
-
¼ cup diced red onion
-
½ cup feta cheese
-
salt & pepper
-
Olive oil

Lemon juice
-
Optional: freshly chopped mint or chives
Salmon:
Watermelon Feta Salad:
Directions
Thaw salmon and pat dry. Drizzle with olive oil and lemon juice. Season lightly with salt and pepper.
Preheat grill to medium-high heat.
Grill salmon on foil or cedar plank for 6-8 minutes.
While the salmon cooks, combine the watermelon salad ingredients in a bowl and toss gently.
Once cooked, serve the salmon over the watermelon feta salad. Top with a squeeze of fresh lemon juice.
