Grilled Salmon Skewers with Chopped Salad

Ingredients

8oz Wild Alaska King Salmon
Olive oil
2 tbsp southwest taco seasoning

3 cups chopped romaine lettuce
¼ cup cherry tomatoes, halved
¼ cup cooked corn
½ avocado, diced
salt & pepper
ranch dressing or dressing of choice
Directions
Thaw salmon and pat dry.
Cube salmon into 1” cubes and add to a bowl. Toss salmon in olive oil and taco seasoning.
Add seasoned salmon pieces to skewer sticks.
Preheat grill to medium-high heat.
Cook salmon skewers for 3-4 minutes per side.
While the salmon cooks, assemble and toss the salad.
Serve skewers with salad.
