Grilled Elote Corn

Ingredients

  • 8 ears of corn, husked

  • olive oil

  • 1 tsp chili powder

  • ½ tsp cayenne powder

  • ¼ cup mayo or greek yogurt

  • 1 lime

  • crumbled cojita cheese

Directions

  1. Preheat grill to 400 degrees.

  2. Brush corn with olive oil and grill for 4 minutes on each side.

  3. In a small bowl, combine mayo, seasonings, and juice of half a lime.

  4. With a brush or spoon, coat each ear of corn with the crema mixture. Crumble cojita cheese over the top.

  5. Serve with extra lime and enjoy!
