Crispy Rice Bites with Dungeness Crab Meat

Sushi rice is cooked, pressed into a dish and chilled overnight until it is firm enough to cut into cubes, then crisped in coconut oil for two to three minutes a side. Wild Dungeness crab gets folded with kewpie mayo, sriracha, sweet chili sauce, sesame oil and green onion and spooned on top, with a thin slice of jalapeño over each. Makes 16 bites.

Crispy sushi rice cubes are pan-fried until golden, then topped with wild Dungeness crab stirred with spicy kewpie mayo, sriracha and sweet chili sauce. Perfect as an appetizer or an upscale snack.

Crispy Rice Bites with Dungeness Crab Meat

Ingredients

  • 1 cup Dungeness Crab Meat

  • 2 tbsp kewpie mayo

  • 1 tbsp sriracha sauce

  • 1 tbsp sweet chili sauce

  • 1 tsp sesame oil

  • 2 tbsp diced green onions

  • 1 jalapeño, thinly sliced

  • 1 cup sushi rice, cooked and chilled (see directions below)

  • 2 tbsp coconut oil

  • soy sauce, for serving (optional)

Directions

    1. Cook rice according to package.

    2. Place in a pyrex dish and refrigerate overnight with a layer of saran wrap on top.

    3. Once firm (wait at least 3 hours), cut the rice into cubes.

    4. Heat coconut oil in skillet on medium-high heat.

    5. Place rice pieces in skillet and cook 2-3 min per side until just crispy and warm. *NOTE: it may take longer for the rice to crisp up but lower and slower is better to avoid burning the rice.

    1. Thaw crab meat. Quickly rinse, strain, and add to a bowl.

    2. Gently stir in mayonnaise, sriracha, sweet chili sauce, and sesame oil. Stir in sliced green onions.

    3. Spoon crab mixture onto rice.

    4. Top with sliced jalapeno and serve with soy sauce if desired.

    5. Enjoy!
