Butter Lettuce Salad with Shrimp

Ingredients

head of butter lettuce
-
2 cups Wild Oregon Bay Shrimp (1 cup per person)

½ cup cherry tomatoes, halved

1 avocado, chopped
-
2 hard boiled eggs
-
blue cheese dressing (we love Toby’s- sold at Met Market!)

salt & pepper
Directions
Begin by hard boiling eggs. For easy-to-peel hard boiled eggs, bring a pot of water to a boil, add the eggs, reduce heat to a simmer and cover for 8 minutes. Immediately submerge the eggs in a bowl of ice/ ice water after and let sit for 5 minutes. Peel under cool running water.
To assemble the salad, add butter lettuce on a plate. Top with tomatoes, avocado, egg, shrimp, blue cheese dressing, salt & pepper.
Serve and enjoy!
