These recipes were created from our passion for seafood, using Premier Catch’s tasty, wild-caught Oregon Bay Shrimp. We love to share them with our friends and family. From our kitchen to yours, here’s one of our favorites!

Butter Lettuce Salad with Shrimp

Ingredients

  • head of butter lettuce

  • 2 cups Wild Oregon Bay Shrimp (1 cup per person)

  • ½ cup cherry tomatoes, halved

  • 1 avocado, chopped

  • 2 hard boiled eggs

  • blue cheese dressing (we love Toby’s- sold at Met Market!)

  • salt & pepper

Directions

  1. Begin by hard boiling eggs. For easy-to-peel hard boiled eggs, bring a pot of water to a boil, add the eggs, reduce heat to a simmer and cover for 8 minutes. Immediately submerge the eggs in a bowl of ice/ ice water after and let sit for 5 minutes. Peel under cool running water.

  2. To assemble the salad, add butter lettuce on a plate. Top with tomatoes, avocado, egg, shrimp, blue cheese dressing, salt & pepper.

  3. Serve and enjoy!
