Watermelon Salad with Mint, Feta, & Balsamic
1 small watermelon cubed (about 6 cups)
1/2 cup feta cheese
1 bunch mint
1/4 cup olive oil
2 tbsp lemon juice
2 tsp honey (more to taste)
Salt & pepper
Optional: balsamic vinaigrette
In a small bowl or cup, mix ingredients for the dressing and whisk until smooth.
In a large bowl, toss the cubed watermelon in the dressing.
Add feta and pulled mint to the watermelon. Gently toss.
Top with salt and pepper and drizzle with a balsamic glaze.
