Simple Shrimp Ceviche

Wild Oregon bay shrimp arrive cooked and peeled, so there is no heat involved — just lime and lemon juice, a short chill, then pico de gallo and cubed avocado folded through. Serve with tortilla chips.

Ingredients
1 lb pack of Wild Oregon Shrimp
4 limes, juiced
1 large lemon, juiced
1 cup pico de gallo or homemade salsa (tomatoes, onions, jalapeño, cilantro)
1 avocado, cubed
tortilla chips, for serving
Directions
Place thawed shrimp in a large bowl. They arrive cooked and peeled, so there is nothing to cook.
Pour lime and lemon juice over until covered, then chill 15 minutes.
Drain off most of the citrus, leaving the shrimp lightly coated.
Stir pico de gallo and avocado in.
Serve with tortilla chips.
