Simple Pan-Seared Halibut with Zucchini Noodles

Wild Pacific halibut is pan-seared and served over garlic zucchini noodles with cherry tomatoes, finished with lemon and a pinch of red pepper flakes.

Ingredients
2 x 8oz Wild Pacific Halibut
8-12 ounces zucchini noodles
2 tbsp olive oil, divided
2 cloves minced garlic
¼ cup cherry tomatoes, halved
salt & pepper, to taste
red pepper flakes, to taste
lemon, for squeezing
Directions
Thaw halibut portions and pat dry. Season with salt and pepper.
Heat 1 tablespoon of the olive oil in a skillet, over medium-high heat. Add the halibut and cook for 3-4 minutes per side or until the fish flakes easily with a fork. Once cooked, remove the halibut from the pan and set aside.
In the same skillet or a new one, heat the remaining tablespoon of olive oil and sauté minced garlic for 2 minutes or until fragrant.
Add the zucchini noodles and cherry tomatoes and cook for 3-4 minutes or until al dente.
Top the zoodles with the pan-seared halibut. Add a squeeze of fresh lemon juice and red pepper flakes for a kick.
